Fiesta Spaghetti
Ingredients
8 oz uncooked spaghetti
2 tbsp vegetable oil
1 small onion, diced
2 cans (8 oz each) tomato sauce
1 can (10 oz each) diced tomatoes & green chilies – mild, original or hot – your choice
1 can (15 oz each) black beans, rinsed and drained
1/2 teaspoon ground cumin
Directions
Cook spaghetti according to package directions, drain and set aside.
In a large skillet over medium heat, warm the oil. Saute the onions until tender, about 5 minutes.
Add the diced tomoatoes, black beans, cumin and tomato sauce. Simmer 10 minutes, stirring occasionally.
Serve spaghetti topped with sauce or mix spaghetti into sauce and serve.
