Apricot Pecan Balls
1/2 cup butter
1 cup sugar
1/3 cup all-purpose flour
1/2 tsp. salt
2 eggs
1 cup dried apricots, chopped
3 cups Wheaties breakfast cereal
1 cup chopped pecans
1 tsp vanilla
3/4 cup powered sugar
Using a 2-qt microwave safe dish, melt the butter.
Add the sugar, flour, salt, eggs and apricots. Mix well and microwave, stirring occasionally, for about 4 minutes or until very thick. Allow to cool slightly, about 5 minutes.
In a large bowl, combine the Wheaties and pecans. Stir in the apricot mixture and vanilla until well blended.
Shape into roughly 1 inch balls.
Place the powered sugar in a plastic bag. Add two or three apricot balls to the bag and carefully shake to coat.
Place coated balls on a cookie sheet and refrigerate 3 hours.
